In 2021, Linda attained a Forks Over Knives Plant-based Ultimate Cooking Course certification from Rouxbe's Culinary School, and then in 2022 Linda found her passion and became a licensed Food for Life Instructor with the Physicians Committee for Responsible Medicine (PCRM).

Now, she practices what she preaches and not only maintains a healthy diet but also exercises regularly. Spreading the word about the benefits of plant-based eating and its relationship to individual and planetary health has become her mission.

A plant-based diet is healthier, less costly, and much easier to follow than other diets. A plant-based diet can be a sustainable lifestyle choice that doesn't fade like fad diets do - when you learn how to shop, select the right foods, and prepare it correctly, a plant-based diet can be a lifelong switch to healthier and more mindful eating.

At age 68, both Linda Oaksford, a retired teacher, and her husband Ed were concerned about their cholesterol levels and looked for ways to change their diets, but after taking a course about plant-based diets and learning that a plant-based diet is better for both your health and the planet, they were convinced.
​
After they left dairy and animal products behind, they started a local support group, at their UU church in Tallahassee, Florida. Food for Thought – a Healthier You, a Healthier Planet meets once a month, where participants share videos, articles, recipes and ideas on how to eat (and live) healthier for the planet.
